Alex Paredes

Alex Paredes is a San Antonio–based chef best known for founding Carnitas Lonja, the acclaimed Michoacán-style carnitas spot that earned him a 2020 James Beard Award semifinalist nod for Best Chef: Texas. After closing Carnitas Lonja in 2023, Paredes is now leading the kitchen at Tacopolis Taquería in San Antonio’s Deco District
